Sheet Pan Gnocchi Lunch

Prep Time: 5 minutes | Cook Time: 20 minutes


Ingredients:

  • 1 package frozen or fresh potato gnocchi

  • 1 package pre-cooked sausage (chicken, turkey, beef, etc.)

  • 1 package (8 oz.) pre-sliced white button mushrooms

  • Cooking Spray

  • 1 lb. asparagus

  • Olive oil

  • Salt and pepper

  • Garlic Powder


Directions:

  • Pre-heat your oven to 400 degrees F

  • Line your baking tray with foil and cooking spray

  • Wash and break your asparagus into pieces

  • Place both the asparagus ad mushrooms onto sheet pan

  • Next, break up and place the gnocchi

  • Chop your pre-cooked sausage into slices about (1/2 inch thick)

  • Evenly distribute everything on the sheet pan

  • Generously drizzle with olive oil and stir with a spoon to ensure all foods is covered with olive oil

  • Sprinkle with salt, pepper, and garlic powder

  • Put in the oven for 20 minutes to bake, tossing half way through cooking time

  • Serve and enjoy!
