Healthy, Cheesy Chicken Enchiladas

YIELD: 4-6 SERVINGS

PREP TIME: 5-10 MINUTES | COOK TIME : 15 MINUTES


Ingredients:

  • 1 medium onion chopped

  • 2 tablespoons of butter

  • 1 1/2 cups of shredded cooked chicken or turkey

  • 1 12oz. jar of picante sauce, divided

  • 3 oz. of cream cheese, cubed

  • 1 tsp ground cumin

  • 2 cups (8oz.) extra sharp Mexican or taco cheese blend

  • 8 flour tortilla (6 inch)


Directions:

  1. Cook and stir onion in butter in large skillet until tender.

  2. Stir in chicken, 1/4 cup picante sauce, cream cheese and cumin.

  3. Cook until throughly heated.

  4. Stir in 1 cup cheese. remove from heat.

  5. Spoon about 1/3 cup chicken mixture in center of each tortilla; roll up.

  6. Place seam side down in 12 x 7 inch baking dish.

  7. Top with remaining picante sauce and cheese.

  8. Bake at 350 degree oven for 15 minutes.
